If there’s one meal that never fails to impress, it’s prime rib. Over the years, we’ve had incredible recipes shared by our customers, collaborators, and chefs who’ve cooked local ranch beef — each with their own flavor twist and style.
Below are a few of our all-time favorite recipes to help you find your perfect roast — whether you’re smoking, grilling, or roasting in the oven.
First, a little bit about the Prime Rib Roast. As we all know it's a beautiful centerpiece for any holiday table. It's tender and juicy and has generous marbling, which makes it even more wonderful. Prime Rib Roast is a family craft butcher cut with the bones removed and tied back on.
The recommended serving size is 8-12 ounces (1/2-3/4 pound) per person and a GENEROUS serving size would be 16 ounces (1 pound) per person. If you go with generous, we won't judge.

The holidays are upon us and it’s time to get your prime rib game on! Here is an easy herb encrusted prime rib recipe that’s amazingly delicious.
1 (8–10 pound) prime rib roast, the bones cut off and tied back
4–6 Tablespoons of Caribeque AP Rub or season liberally with salt and pepper
Olive oil
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
4 cloves of garlic, diced very finely
Preheat the grill / smoker to 225 degrees.
Combine Caribeque AP Rub (or salt and pepper), chopped thyme, rosemary, and garlic in a bowl. Mix together into a “rub mixture”.
Coat prime rib roast with olive oil and apply rub mixture heavily to all surfaces.
Place prime rib roast on grill and cook until the internal temperature reaches 125–135 degrees F.
Use a meat thermometer to test for doneness. We recommend 135 internal temperature for the perfect medium-rare roast.
Pull roast off the grill. Rest for 20 minutes.
Slice, serve and enjoy!
