*Beefy Jalapeno Popper Dip is a great leftover beef dish. Swap out the cooked ground beef with leftover of your choice: carne asada, shredded beef, brisket, steak

My family loves jalapeno poppers. The spicy, cheesy, bacon wrapped goodness is a hit each and every time. But let’s face it, traditional poppers can be a time consuming, messy endeavor.

Try this family favorite Beefy Jalapeno Popper Dip recipe and never, ever stuff or wrap another jalapeno again.

It’s a one pan meal that the kids are making almost on their own now. In fact, my 9 year old did her first on video recipe making this dip. I prepped the ingredients and she mixed it all together.

Beefy Jalapeno Popper Dip Tips

  • Roast the fresh jalapenos if you have time but in a pinch, use canned already diced jalapenos.
  • Mix the dip together and pop it into the oven before you brown the ground beef to cut down on prep time.
  • Cook the bacon in advance too. I double up at breakfast then hide the bacon for this dip in the fridge before the family devours it.
  • Replace the ground beef with ANY leftovers you have in the fridge. Think steak bites, brisket, shredded beef or carne asada.
  • If you like spicy, don’t be afraid to add more jalapenos to the cheese mixture (this recipe is the kid-friendly mild spice version).
  • Prep the cheese mixture in advance to pop into the oven for a quick, hearty appetizer on party day.

My kids love to help make this dip. A big bowl and a couple of mixing spoons go a long way in combining the cheese mixture. The hardest part is remembering to set out the cream cheese in advance. I have used my kitchen aid to mix in a bind, especially when cream cheese is direct from the fridge.

I prep the ingredients and the kids mix. It’s that simple. Pour the cheese mixture into a baking dish or into your favorite cast iron skillet. You can bake in the oven or on the smoker grill. Whichever you prefer.

While the cheese mixture bakes. Brown your ground beef and drain any fat.

You can top the dip with ground beef as soon as it comes out of the oven. Then get creative with your toppings. We like pico de gallo, bacon and cilantro but anything goes here.

We call the Beefy Jalapeno Popper Dip an appetizer. But it’s hearty and filling enough for a main dish (and Keto too!). Serve it with a variety of dippers from chips and flat bread to cut vegetables and pork rinds. Enjoy!
