Ingredients
  • 2 pounds Felton Angus Beef ground beef
  • 1 onion, chopped
  • 1 can (14 oz) tomatoes with green chilies (Similar to Rotel)
  • 1/2 cup water
  • 1 can (14 oz) cream corn
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
Topping
  • 1 box corn bread mix
  • 1 egg
  • 1/3 cup milk
  • 1 can (14 oz) cream corn
  • 1 cup cheddar cheese, grated

How to cook Railroad Pie

Directions
  1. In a large cast iron skillet, brown beef and onion. Drain if needed.
  2. Add tomatoes, water, 1 can cream corn, salt, pepper and chili powder
  3. Simmer 15 minutes
  4. In a separate bowl, mix all topping ingredients
  5. Pour corn bread topping mix over meat mixture (or layer in baking dish if desired: meat mix first then corn bread topping)
  6. Bake @400 for 20-25 minutes until cornbread topping tests done.
